Mouth Wateringly Awesome!

Those are the words used to describe a new treat that a friend told me about.

You'll need:  

1 Box of Pillsbury Devil's Food Sugar Free Cake Mix

1- 15 oz can of canned pumpkin

2  handfuls of chocolate chips

Did you know they even made sugar free cake mix?  I didn't!!  And yes, it's made with Splenda, which I normally don't eat...
(wishing it was made with Stevia instead!)

Mix together (batter will be very, very thick)
Use a handheld mixer unless you need to firm up your forearms!!

Fill a cupcake pan (lined with foil liners) and I mean FILL them

(in fact I squished the batter down using a metal spreader)

Bake at 325 for 20-23 minutes (until toothpick come out clean)


They are so good...moist, chocolatey (cannot taste the pumpkin at all).

Drat reading this post and looking at the photo while I haven't had breakfast yet...made me wish I could reach out and grab one to go with my coffee.
I think you could do this with the regular cake mix instead of sugar free, if you don't like the splenda.

Look delicious but I'll just have to settle for admiring the picture as not for we diabetics. Just too many carbs. Thanks for sharing though as I always enjoy finding out what others cook.

I've made a cake this way before and it is really good. Another one that's good is an angelfood cake mix with a can of crushed pineapple.
I had no idea they made a sugar free cake mix. I'm going to look for it the next time I go to the store. This will fit in with my diet and cure my chocolate craving
